Recipe - Apricot and Provence Honey Tart

Today, we're indulging our sweet tooth with this recipe for apricot and Provençal honey tart . Of course, it's best to make it during the warmer months to ensure the apricots are perfectly ripe ... in the southeast of France, to stay on theme :) Out of season, you can always use frozen apricots, which are also picked at the right time.
To add a floral and sweet note and thus break the acidity of the apricots, we are relying here on a Provençal honey: the one with lavender from Provence!
Follow the guide to make this very simple , delicious, summery dessert step by step.

Ingredients :
- 1 sweet shortcrust or puff pastry base according to your taste (homemade or store-bought, you're the chef!)
- 600g of apricots
- 50g of lavender honey
- 50g of almond flour
- 1 to 2 tablespoons of brown sugar
- a few grains of (untreated) lavender (optional)

Steps :
- Cut the previously washed apricots in half
- Heat the honey in a large pan and arrange the orache halves on top over medium heat to roast them gently
- Line a high-sided mold with the dough and sprinkle the bottom with almond flour.
- Next, arrange the apricots, sprinkle with brown sugar and, if you have some, a few lavender buds to enhance the flavor while decorating your tart
Bake for 30 minutes at 200°C (390°F). Keep an eye on it as baking times vary from oven to oven. To prevent it from browning too much, cover it with aluminum foil to continue baking without scorching the tart.

And there you have it, all you have to do is enjoy it however you like: warm or even cold : it will always be just as tasty!

- The almond flour here helps absorb the juice released by the apricots. You could also consider replacing it with a financier batter , which would make this dessert even more decadent.
If you're not a fan of lavender, you can opt for a less floral honey, such as rosemary honey , which will add an aromatic note to your tart. Those with a sweet tooth will prefer wildflower honey, made from wild blossoms , for its smooth texture!
- If you're serving your tart warm, a scoop of ice cream will be perfect for playing on the temperature contrasts . A scoop of vanilla ice cream is a classic combination that's always a winner, or a scoop of lavender ice cream for the more adventurous: let your imagination run wild!
